Cause of Flavour
Caused in alcoholic beverages – mainly beers – from lactic acid bacteria contaminating the mashing stage being brewing. Lactic in some beers, stouts and ales can be seen as a positive flavour at the right concentrations.
In other beverages lactic is caused by contamination of sugar, raw material and finished product with lactic acid bacteria.
