Cause of Flavour
Yeast is caused by fermentation – over fermentation and uncontrolled growth of yeast cultures during brewing. Yeasty like flavours need to be removed and where there is not adequate control of the process will allow yeast to grow unchecked. Yeasty flavours are also added by the wrong kind of yeast being used for fermentation – either by accident or via contamination of wild yeasts. Yeast that hasn’t been removed after fermentation can be caught up in other brewing processes adding it’s distinctive flavour.
Yeasty like flavours can occur in non-alcoholic beverages when poor hygiene has occurred.
