It can also be generated by the heating of grains and malt from the maillard reaction – a precursor chemical is produced that then breaks down into methyl mercaptan and oxidised into DMDS. Dimethyl Disulphide can occur in non-alcoholic beverages – due to the contamination of source water with decaying organic matter, break down of sugars and exposure to microorganisms. DMDS is often confused with Cooked vegetable, DMS, ethanethiol and methanethiol flavours.
