Cause of Flavour
Salty is a basic taste – it can occur in all beverage types and provides a contribution to the overall taste balance of products.
It can be imparted by the use of flavourings, raw materials and from malt and brewing liquor. Salt can also be deliberately added to the products.
Salt can also occur when tank and system cleaning is poor – residual salt from source water and other processes can solidify on the walls of tanks – to be release into other products at a different time.
