Acetaldehyde flavour is caused in alcoholic beverages as part of the natural yeast fermentation process. Acetaldehyde flavour indicates high oxygen levels within packaged products. This flavour standard is based on Acetal conversion to Acetaldehyde and tastes different from pure Acetaldehyde.
