– Chlorophenol
Occurs due to poor CIP processes
– H2S
Occurs from CO2 production and by product of neutral spirit fermentation
– Mercaptan
By product of neutral spirit production. Contamination of syrup’s / juices.
– Bitter
From flavourings, abundance of limonene, residue content in water
– Ethyl Hexanoate
Common flavour carryover due to poor CIP and production processes.
